Chocorooms


きのこの山!
About a month ago or so, I found these at Costco. I instantly liked the new English name! How perfect for the tiny, yummy mushrooms! I used to buy the smaller Japanese version of this at Asian stores every once in a while. They usually charge close to $2 a box, but this ten-pack doesn't even cost $10. What a deal! I hope Costco will have them after the holiday season too.I like the original package better though. It reminds me of my childhood in Japan...

Potato Chicken

Chicken, thinly sliced potatoes, and asparagus cooked in consommé soup with fresh rosemary from the backyard, garlic and parsley. It doesn't look so pretty but tasted good. Great with steamed rice!

Veggie soup & bread

Veggie Soup with tomatoes, cabbage, carrots, onions and lots of O-shaped pasta called Anelletti by Trader Joe's & Veggie SHOT Bread

I really didn't expect the kids to eat much today, but they actually ate a lot! They even ate some "visible" pieces of vegetables in the soup and liked the bread too. I was so happy!

This is one of the best bread I baked so far! Believe it or not, it was baked with juice that has 20 kinds of VEGETABLES like carrot, spinach, sweet potato, red bell pepper, green beans, celery, lettuce, broccoli, kale, pumpkin, green bell pepper, asparagus, Napa cabbage, cabbage, radish, etc.!!! It tasted so good that the kids ate a lot too! The juice is called 充実野菜 or Veggie SHOT and is made by a Japanese tea company.

Dango


I finally made these little shiratama (白玉) dango with kinako (soybean flour) for the first time! I never cared about shiratama dango when I was a child, but these were so soft, smooth, and pretty tasty! Maybe because I mixed in some tofu?

Lunch with Pingu's relatives. This time with Potato Bake. For some reason, I really felt like eating potatoes, so I baked some crinkle cut potatoes with onions, bacon and cheese. By the way, I LOVE my OXO Crinkle Cutter! Such an awesome tool!

Sweet & Sour Pork

The picture looks OK, I guess, but after taking a few shots of this, I realized that I forgot to add pineapples! I put the dish back into the pan and stir-fried it with the pineapples, but I was so tired and mad at myself that the next set of pictures didn't look good at all... It wasn't a good day for me.

コーヒー牛乳パン: This turned out to be surprisingly tasty. Japanese coffee-flavored milk (that you can often find at Kiosk at train stations in Japan) is similar to bottled Frappuccino but less sweet.

Pumpkin Bake ~ wheat & egg-free version

Pingu's relatives loved it. His aunt later told me she ate too much of it for lunch that she was too full to eat dinner that day. The original recipe is from Quality of Life by JUNA (JUNAさんありがとう!とっても美味しかったです), but for my daughter who is allergic to eggs and wheat, I made some changes.

Here's my recipe:
  1. Preheat the oven to 425 degrees. Thinly slice a quarter of kabocha pumpkin (I prefer organic since we eat the skin as well) and boil it for 3-4 minutes. Do not over-cook it.
  2. Place the pumpkin in layers in a oven-safe dish and season each layer with salt and pepper.
  3. Put a thin layer of egg-free mayo. Sprinkle some mixture of Parmesan cheese and chopped parsley.
  4. Top with shredded Mozzarella cheese and sliced almonds.
  5. Bake for about 15 minutes.

Tamagoyaki

My mom's tamagoyaki. Hers never has any fish broth but lots of SUGAR! It almost tastes like cake. Great with some soy sauce and shredded daikon!
