Pasta Salad Bar


This is very easy to prepare and is one of the meals the kids love. Just use whatever you find in your fridge & pantry, and place them on a cheerful tablecloth. :) I recommend this to busy moms.

What we had today: rotini (curly pasta), mushrooms, broccoli, zucchini, carrots, corn, peas, canned tuna, and olives.

Other ideas: lettuce, cabbage, spinach, onions, green onions, green bell peppers, tomatoes, pinto beans, garbanzo beans, kidney beans, boiled eggs, canned chicken, grilled chicken, ham, raisins, etc.

No-Fry Fried Rice

This was made in a rice cooker. We're still avoiding soy, so I used some chicken base instead of soy sauce. The kids didn't like it. I lost again. :(

While the bread was being baked, it kind of smelled like sourdough bread, but it didn't taste sour at all. It was one of the most moist bread I've ever made.

Beef Roast with Tendon


A local mom friend brought this beautiful Chinese meal for us!

- beef roast with tendon and turnips
- purple sweet potatoes
(Pingu was explaining this to the kids as "Yahoo! sweet potatoes")
- black and brown rice

AND gluten free chocolate chip cookies for dessert! Yummy!
