Dairy & Egg-Free Chocolate Chip Cookies

My son and daughter made these cookies by themselves! They were so proud. :D

Red Velvet Cake with Cream Cheese Frosting

An egg-free/dairy-free/peanut-free 10" red velvet cake with dairy-free cream cheese frosting and filling by Let Them Eat Cake, The Allergy-Friendly Patisserie for Pingu's brother's and father's birthdays. So beautiful, impressive, and tasty. Everybody enjoyed it. Thank you for letting my daughter eat cake, Amanda and Jason!

Dairy-Free Rainbow Jello

I wanted to make some kind of fun and cute dessert without eggs or dairy to take to my daughter's preschool on her birthday. After spending some time on-line searching for recipes, I decided to try making this Rainbow Jello. I started around 11 a.m. and finished making the last layer after 10 p.m. since I worked on it only when I had time. If I had had nothing else to do though, I probably would have been able to finish it in less than four hours. I replaced evaporated milk with soy milk for all the cream color layers.

These were the BEST cupcakes I've ever had in this country! So much better than the ones at Whole Foods. How do they do that? :o South Bay Area parents of kids with food allergies, you gotta try their cakes!
