I made this rice dish in a dutch oven pot for the first time, and it turned out to be the best I've ever made!

I don't know what I was thinking, but I put the green onions in the pot too soon (I was supposed to do that after the rice got cooked!), so they aren't bright green. :( Oh well... at least everybody liked it.

I really didn't expect the kids to eat much today, but they actually ate a lot! They even ate some "visible" pieces of vegetables in the soup and liked the bread too. I was so happy!
