Macadamia Chocolate Chip Bread




Dairy-free chocolate chips

「いいコト、みつけた。オーストラリア・マカダミア」 というサイトを見ていたら、なんだかとってもマカダミアナッツが食べたくなってしまった私。最近開店したばかりのSproutsというお店に買い物に出かけた時、量り売りコーナーでマカダミアナッツを発見。思わず買ってしまいました。これと乳製品なしのチョコチップを使っておやつパンを焼いてみました。

Ingredients:
bread flour (250g)
soy milk (178g)
salt (3g)
honey (50g)
vegan butter (20g)
macadamia nuts (60g)
dairy-free chocolate chips (65g)
yeast (3g)

Note: If you don't have any allergies, please use regular milk, butter, and chocolate chips.

Red Velvet Cake with Cream Cheese Frosting

An egg-free/dairy-free/peanut-free 10" red velvet cake with dairy-free cream cheese frosting and filling by Let Them Eat Cake, The Allergy-Friendly Patisserie for Pingu's brother's and father's birthdays. Crispy Bread with Fresh Rosemary

採れたてローズマリー入りフォカッチャ風サクサクブレッド

I mixed fresh rosemary into this フォカッチャ風サクサクブレッド recipe that I found in one of my Japanese bread books. I also added some extra steps: I took out the bread pan right before the bread machine would go into the baking cycle, brushed the dough with olive oil, sprinkled with salt, and put the pan right back into the machine.

This time I baked it using the regular mode that takes about four hours. It turned out a bit harder than the quick baked version. After experimenting with different recipes and baking options, I've come to decide that this one is the closest to the bread at Romano's Macaroni Grill Italian Restaurant. Delish!

No-Egg, No-Dairy Baked Eggplant & Chicken Parmigiana

Instead of deep-frying eggplant, I used frozen grilled eggplant (that already had lots of olive oil), sprinkled it with panko, and baked it in the toaster oven. In a baking dish, I placed some pasta sauce, eggplant, pre-baked frozen chicken nuggets, dairy-free cheese as the last layer, and baked it in the oven. This is kind of a cheating recipe, but it tasted very good.

These were the BEST cupcakes I've ever had in this country! So much better than the ones at Whole Foods. How do they do that? :o South Bay Area parents of kids with food allergies, you gotta try their cakes!

No-Mayo Potato Salad

マヨネーズなしポテトサラダ

Ingredients:
instant mashed potato flakes
ham, chopped
marinated onions
green onions, chopped
vinegar
olive oil
salt & pepper

Make mashed potato according to the package instructions. To make it dairy-free, use soy milk instead of milk, Smart Balance Light (this is the only Smart Balance without whey) instead of butter. While the potato is still hot, mix in vinegar. In a large bowl, mix all the ingredients.

How to make marinated onions: Slice onions as thin as possible (I use a slicer to do this). In a glass container, mix onions, vinegar, oil (either vegetable oil or olive oil), salt, and pepper. Cover and store in the refrigerator. Marinate at least a few hours before using. You can keep it in the refrigerator for about two weeks.I recommend Pyrex rectangle food storage container with a lid for marinated onions. These are also great for storing vegetables that I slice/chop/steam/boil in advance.
