Creamy Egg-drop Corn Soup

My mom used to make this soup very often when I was a child. It's raining and so cold for April today that I really felt like having it. I had to secretly enjoy it while my daughter who's allergic to eggs and milk was at school. It was so good! I must have had at least four bowls of it.

Orange Beef Meatballs with Cauliflower

My lunch today. I made this up by combining whatever I found in my fridge and freezer. With frozen meatballs, pre-steamed cauliflower, pre-chopped green onion and a bottle of Panda Express orange sauce, it only took a few minutes to prepare this.

No-Egg, No-Dairy Baked Eggplant & Chicken Parmigiana

Instead of deep-frying eggplant, I used frozen grilled eggplant (that already had lots of olive oil), sprinkled it with panko, and baked it in the toaster oven. In a baking dish, I placed some pasta sauce, eggplant, pre-baked frozen chicken nuggets, dairy-free cheese as the last layer, and baked it in the oven. This is kind of a cheating recipe, but it tasted very good.

Dairy-Free Rainbow Jello

I wanted to make some kind of fun and cute dessert without eggs or dairy to take to my daughter's preschool on her birthday. After spending some time on-line searching for recipes, I decided to try making this Rainbow Jello. I started around 11 a.m. and finished making the last layer after 10 p.m. since I worked on it only when I had time. If I had had nothing else to do though, I probably would have been able to finish it in less than four hours. I replaced evaporated milk with soy milk for all the cream color layers.

Kimchi Tarako Spaghetti

Kimchi Tarako (Alaska pollock roe) Spaghetti

I was going to eat plain tarako spaghetti but remembered I had some kimchi in the fridge. Wow, very tasty! Next time I'll grind sesame seeds.

Rotini with Lemon Garlic Eggplant


I made this up with what I had in the fridge again.

Sprinkle sliced eggplant with salt and leave it for over half an hour. Rinse and pat dry eggplant. Heat olive oil and cook chopped garlic. Stir-fry eggplant and steamed asparagus. Add fresh lemon juice, white wine, salt, and pepper. Transfer the eggplant sauce into a dish, add some olive oil, and let it marinade for a while. Mix the sauce (room temperature is OK), chopped tomatoes, and cooked pasta in a large pasta bowl.

The eggplant tasted pretty good (I guess the first step with salt really worked well), and Pingu liked it too, but the kids didn't care once again. :(

Wheat French Bread

Since I haven't baked with whole wheat flour for a while, I decided to try adding some to a French bread recipe found in one of my bread books. Baked with the regular "Bake" mode instead of "French." It turned out very good, and the kids especially liked it.

Ingredients:
bread flour (200g)
white whole wheat flour (50g)
water (175g)
lemon juice (3g)
salt (5g)
sugar (8g)
yeast (3g)
